What's the differents between my current os xp pro and server 2003? Can I have both running on my computer? I was under the impression that server 2003 was needed only if your were hosting.

Now, to answer your question...
XP Pro is designed to be a destop operating system that you use on a daily basis, while Server 2003 is designed to be a server. In other words, Server 2008 is optimized for, and includes features that are designed to run standalone servers. For example, you would use Server 2003 if you were running an Exchange server, a web server, etc. Many people choose to use Server 2003 (and now Server 2008) as a desktop operating system for personal reasons.
